Our custom designed chipping plant is situated in
the heart of Newry City and is where the chips used
at all our restaurants are made exclusively for that
purpose.
Our chips are cut from maris piper potatoes fresh
every day and because they are not frozen we are serving
them to you at their very best.
From very early in the morning staff are preparing
to make chips for the days use. The process is one
which the staff have been carrying out for years and
are now accustomed to it so you can be content that
with our dedicated staff you can be satisfied you
are eating the same high quality product each day.
The process begins with placing potatoes in a destoning
tank. This removes any stones, which may have slipped
through our supplier's high levels of quality control.
From here the potatoes are then sent to a peeler.
This is a series of rotating high-speed abrasive rollers,
which uniformly remove the skin from the potato.
From here the peeled potatoes are passed over a series
of rollers to storage containers where staff check
for any remaining skin left on and other signs of
contamination.
The potatoes are covered in water to prevent them
from drying out and browning. From these storage containers
the potatoes are transferred to the chipper, which
is a machine that cuts the potatoes into the shape
you see every day in our restaurants.
The chips are then blanched in large boilers to reduce
the sugar (starch) content, which causes excessive
browning of the chips once fried in oil. When the
chips have cooled they are weighed out into trays
for delivery to the restaurants.
